To the aphorism "Time turns tragedy into comedy," I'd like to add "and menus." Exhibit A is the Bastille Day menu at Provence for tomorrow, July 14.
At the top of the list has got to be the brown butter madeleines, a soft cookie baked in a special shell-shaped mold. Never underestimate the power of brown butter to transform anything. Next is Paris Brest, a creme-anglaise-filled cake like a giant cream puff. Provence's version luxes it up with praline cream.
The sandwich du jour is fig chutney and brie grilled on sourdough bread.
And of course, Provence's breads like the brioche and baguette are authentically French every day of the year. Tomorrow they're supplemented by summer basil pistou and the epi, shaped like a wheat stalk.
You can procure said goodies at the Provence in Hillsboro Village, in Hill Place Green Hills, and at the Provence in the downtown library.
