Personally, I go with convenience and pick up a bunch of oxtails at Kroblix. They make a pretty good stock with nice gelatin. And while it won't have a whole lot of flavor left in it, you can use the meat in another preparation and add your own flavor to it for a quick protein boost. Maybe in a soup or some tacos or something.

If I was looking for guidance as to the absolutely vital, must-try, Nolensville Pike vicinity Mexican joints (and I'm thinking of places like Taqueria San Luis), where would I be directed? I'm looking to do a great big "tour of Nolensville" Mexican food, like a dozen or so places.

Pierre: Las Americas just past Haywood Lane on the right side of Nolensville Road is a must—both cheap and great. Try the pupusas.
My personal favorite (more upscale) is La Terraza at the intersection of Nolensville and Bell Road in the Kroger shopping plaza. The grilled alambres (essentially a sizzling plate of fajitas studded with morsels of bacon fat and drizzled with cheese) are homemade sin, and the crispy whole fish is a treat. Las Cazuelas (which I believe is run by the same family) is also really good on Nolensville closer to Harding.
I hear great things about the taco truck at K&S, but I haven't tried it myself. I'll let Fluffernutter vouch for Tapatio 2, which sounds amazing (especially when she writes about it). And my bud P.J. Tobia always raved about the tacos at the renovated gas station on Nolensville past the zoo (the name escapes me, but I think "Mariscos" is part of it).
There's also a good pupuseria just off Nolensville on a side street before you get to the Wal-Mart at the Harding intersection. Any Nashvillian could find it from those directions.
Went to Bosco's on Tuesday night and had another great meal.
Is Satay still open? No posts about that place in a while, everyone seems to rave about it.
Also, don't forget that Prince's will be closed on July 4th. If you want hot chicken on the 4th (outside the chicken fest) you gotta pick it up on the 3rd.
Thanks for the tip, Dave—I'm majorly bummed every time I show up at Prince's and find the door locked. Consider yourself the Paul Revere of hot chicken.
Also, I think Savarino's will be shutting down for a few days around that time while Corrado takes a vacation. He just didn't want anyone jumping to conclusions and asked us to spread the word.

The taco stand you’re thinking of is called Taco Lopez # 6. I would also suggest the Al Pastor tacos at Los Arcos, also close to the zoo.
Today for lunch, tried Taste of Russia about six months after everybody else. Taking the advice of others, my dining partner and I got a hodgepodge of items and shared everything. We had two bowls of borsch--piping hot and delicious with a dollop of sour cream--and one plate of eggplant wraps. Kasha was nutty and soft; the farmer's cheese in the blintzes was wonderfully seasoned, and we enjoyed them with currant jam. It was a fun, filling meal in a comfortable space.
I went to Satay with some friends right a few weeks ago before Pickin' Party out at Percy Warner. We were all very pleased with the price/quality/amount of the food.
I think I just had one of my best Sunday afternoon lunches ever. I hit the Mas Tacos truck in the Walden Market and had a fish taco and quinoa taco. Fabulously tasty! I washed it all down with an incredible fresh mint iced tea from Ugly Mugs. Check it out while it lasts. On the way home I hit Las Paletas. I lucked out, they are open on Sundays until 5. Now if all my lunches were so great and local!
