With summer picnics and the July 4 Hot Chicken Festival upon us, it's time to start thinking about candidates for the Best Fried Chicken in Nashville, for the Scene's Best Of Nashville issue this fall. I've got a few contenders in mind, including an admirable specimen at Jefferson's restaurant, which is the subject of the dining review currently on newsstands.
Jefferson's focuses on a healthy approach to soul food, using canola oil, very little salt and a healthy dose of lightly cooked vegetables, including sauteed spinach and green beans. While it's healthier than most restaurants serving traditional meat-and-three food, Jefferson's still boasts a fried chicken that can hold its own with the most decadent versions, at, for example, Bailey & Cato Family Restaurant, Southern Bred and other contenders for Best Fried Chicken in Nashville.
