In my ongoing quest to indulge in every available beet-related food I can find (Watch out, Fido beet cake!), I recently ran across an old friend at Marché: the tartine with beets and goat cheese.
My favorite of the tartines I've sampled at the East Nashville eatery, this pile-up of toasted bread, roasted beets, creamy goat cheese and peppery arugula, drizzled generously with olive oil, is a vibrant salute to the season and a reminder to me to get my beets in the ground stat--if it's not already too late.
