Jack's Bar-B-Que: High or Low?

I've never watched an episode of BVTV before, so I can't vouch for their taste, but they did shoot an episode at Jack's Bar-b-Que on Broadway, interviewing owner Jack Cawthon and taking a look inside the house smokers.

There are a couple points of concern here, far as I can tell. First, the butt is part of the shoulder? Really? I suppose that means that butt and shoulder are treated the same way in the smoker (which sounds like either the punch line to a really bad joke or, uh, the set-up to one). Secondly, does saying "I used to do high-end food" not imply that bar-b-que is "low-end" food?
