Holidays mean food--whether it's roast beast or red apples dipped in honey--so it's ironic that a holiday that restricts foods I absolutely love--bread, pasta--would also be my favorite food festival.
Whether it's matzo brie--matzo soaked in egg, served with syrup--or my gentile boyfriend's greatest fear in life, gefilte fish (especially the jelly), the Passover staples fill my heart with joy. But my absolute favorite thing I eat during Passover is kind of an underdog: Tuna melt on matzo.
As I've mentioned before, I was raised in a kosher house, so tuna salad was a very popular lunch option (it's parve and can be eaten with both meat and dairy). It was also an extra special option during Passover due to two factors: 1. It tastes delicious on potato chips--totally KFP (kosher for Passover). 2. When slathered on a piece of matzo, covered with cheese and popped in the toaster oven, it has the ability to make certain people (awkward hand raise) squeal with delight.
I know there aren't too many MOT's (members of the Tribe) out there in Bites land, but for those who are, what are your favorite Passover treats? Chocolate lollipops? Potato kugel? Matzo ball soup? Matzo pizza?
