When I was in Thailand (Yes, I went to Thailand. Have you heard?) one of the highlights was a Thai cooking class I took. I've been meaning to try out my new skillz ever since I got back, so yesterday I spent a little time tossing random stuff into my basket at the Charlotte Ave. K&S World Market. The selection of Thai products was actually a little slim--I know we don't have a huge population here--but I managed to snag enough familiar items to (hopefully) approximate some of my favorite dishes like Pad Thai and Pad Kra Pow (minced chicken with basil and chilis). I also couldn't resist the thrall of a packet of Thai eggplants. They're so cute! And strange! And I have no idea what I'm going to do with them. It's like I've issued myself a culinary dare. They traditionally make their way into green curry, but there was no galangal (Thai ginger) at the market, so that's off the list. Any ideas?
Also, what are your favorite random pick-ups at K&S? Does anyone know a grocery with a larger selection of Thai products?

The Lao Trading company on 8th has a pretty good Thai selection. I love the little teensy eggplants that look like marbles.
Lee, K&S does sometimes have fresh Galangal but always has it in brine.
The K&S out Nolensville Road, in the former Service Merchandise, has a way bigger produce section than the one on Charlotte. Exotic stuff galore, though I don't know how much it's oriented to Thai.
Yeah, I was out there a couple weeks ago. If anything, it has an even more Mexican/South American focus because of the demographics out there.

it's always fun to see live sturgeon swimming around where the jewelry department used to be—and sporting goods/toys is now frozen foods.

I don't know why exactly, but it seems like every corner in Murfreesboro has a Thai/ Asian market. And there are a lot of Thai restaurants as well.
Whole Foods usually has Galangal. Another option is International Market on Belmont. They might be willing to sell you some galangal (if they have any). They also have a lot of prepackaged Thai ingredients. I once needed some Thai basil, and neither Whole Foods nor Kroger had any. So, I called up International Market and they told me they would be willing to sell me some. I stopped by 10 minutes later, and Patti sold me a big zip-loc bag from the kitchen.
