Wal-Martian Lamb Shanks

Back in the 1980s, I could occasionally find lamb shanks at the bottoms of freezers in ethnic markets or at Green Hills Meat Market. It was always New Zealand lamb, which was slightly annoying, since Colorado has a thriving lamb industry. I found Colorado lamb chops for sale once, at Wild Oats.

My eye-opening trip to Wal-Mart included finding lamb shanks, a major event, and finding that the lamb is raised in the United States, which elevates a mere event to a miracle.

What else have I been missing by not shopping at the place with its own bus stop?

How do you prepare lamb shanks? And can I banish the image of the woolly critter gazing at me with its wide, imploring eyes?

Braise, baby. I once went to visit DW farms in Pulaski. Two kids, 9 yr old boy and 12 yr old girl live there. Awesome kids, they raise sheep on their farm. One sheep followed us around like a dog, I asked Carly what it's name was and she said "Clara". I look into the field with all of the random sheep and their lambs and asked what another one's name was. She looked at the tag on its ear and said "143". They're still delicious once you meet them, but you cook them much more reverently.

what else are you missing? pretty cheap - ok, not cheap, let's just say relatively reasonably priced - Parmigiano-Reggiano. A supply of avocadoes that somehow always includes several at just the ripeness you're needing. 25 pound bags of black oil sunflower seeds at prices that rival the feed store's price. Bigger jars of Orville Reddenbacher's popcorn for less than the smaller jars elsewhere. pretty good prices and selections of soy milk, although my favorite's gone missing. They've added organics - they want to be the biggest seller of them - and their prices are refreshing. (That's not without controversy, as they have placed them in with the regular products instead of having an organics-only section. I'm not passionate about this either way, so it's slightly more convenient to my neanderthal view.) Lots of tofu, not all the herbs you think they should have, pretty good deli but no boar's head.
sadly, you won't find bison/buffalo anywhere. Wouldn't that be something if WM carried grass fed bison products? **sigh**
Like everyone else, I tried really hard to ignore WM and make them go away. Then I realized they weren't ever going away because of me, but my money was going away to other stores who don't necessarily care any more about me or my issues. I'll fight my battles elsewhere.

SL thanks for all the tips. Are you eating the sunflower seeds? Or feeding birds?

While my personal sunflower habit was legendary in its day, the 25 pounders are earmarked for the birds, chipmunks, squirrels and whatever else happens by my zillion feeders.
