From knife techniques to raw sweet treats, the Salud! cooking school at Whole Foods runs the gamut of all things culinary. Here's a short list of upcoming events at the Green Hills store:
Jan. 28: Braises & Stews, 6-9 p.m., $65: Cindy Chambers will teach all about slow cooking and its ability to enhance food's flavor as you whip up a menu including braised short ribs and beef stew.
Jan. 29: Seafood Essentials, 6-8 p.m., $40: John Burge will delve into murky seafood waters, addressing the difference between wild and farmed fish, the best way to prepare particular seafoods and the finer points of buying and storing.
Jan. 30: Port Wine Tasting, 6:30-7:30 p.m., $15: Discover the pleasure of port's smooth, "rich" taste as you learn of different port styles, including Ruby Tawny, Late-Bottled Vintage and Vintage character.
Jan. 31: I'm Learning to Cook, 9:30 a.m. to 12:30 p.m., $35: This class for 6- to 9-year-olds teaches skills of measuring ingredients, making simple doughs and preparing vinaigrettes, exposing young cooks to a culinary world beyond ramen noodles.
Jan. 31: Sushi Workshop, 5-8 p.m., $55: Learn the intricacies of making sushi rice, choosing fillings and rolling ingredients as you prepare inside-out California rolls, nigiri sushi, spicy tuna rolls and cucumber rolls.
Feb. 3: A Night in Normandy, 6-8 p.m., $40: Merijoy Lantz Rucker will give you a taste of Normandy by preparing dishes such as côtes de porc Normande (brined pork chops with caramelized apples and Calvados cream) and tarte Bourdaloue (almond pear tart).
Feb. 4: Cooking in Season with F. Scott's, 6:30-8:30 p.m., $40: F. Scott's chef Will Ulhorn will show you how to make unique appetizers, entrées and desserts using seasonal ingredients.
Feb. 5: Introduction to French Wines, 6-8 p.m., $40: Experience Champagne, Burgundy, Alsace, the Loire Valley, the Rhone and Laguedoc-Roussillon within the course of two hours as you taste a variety of regional French wines.
Feb. 6: Cooking Value Meals, 11-11:30 a.m., free: Learn how to prepare an easy, cost-effective (under $15) meal for a family of four. Because of limited space, registration for this course is required.
Feb. 7: Winter Brunch with Friends, 10 a.m. to 1 p.m., $50: With items such as smoked salmon canapés with caramelized onion-cream cheese, citrus & fennel salad with mint and cheddar-scallion biscuits on the menu, this class will shatter the idea that brunch is limited to eggs, pancakes and bacon.
