Hotel owners to engineer restaurant in Union Station

After months of speculation about who will create and run the restaurant inside the renovated Union Station hotel, the developers have an answer: they’re doing it themselves. “We’ve decided to keep it in-house and operate and manage it ourselves,” says Melanie Fly, director of marketing for Union Station, which is owned by Florida-based Turnberry Associates and Nashville-based Corner Partnership. Aptly named executive chef Tom Cook, who has manned the hotel’s catering operation since late 2005, is finalizing a menu and kitchen team to debut in the former location of Arthur’s by early summer. “Tom’s done such an incredible job that we’ve decided to give him that opportunity,” Fly says. Cook says his menu will focus on foods made from scratch, using organic products and reflecting a mix of cultures.
The yet-to-be-named restaurant and bar located in the ground floor of the historic train station on Broadway are currently undergoing a complete overhaul as part of a $10 million renovation of the property, which should be completed by the end of May.
